Tips for using the Ooni Pizza Oven:
1 – The Ooni 3 Pizza Oven is designed to cook pizzas at 600-700°C. The white interior dome reflects the heat down towards the base of the oven, where it forms a thermal boundary with the base plate, ensuring that no heat escapes outside this ring. This means you need to allow time for your pizza stone within this boundary to heat up before cooking begins – typically 30 minutes should do it.
2 – Use 21 Oz (600 ml) dough balls for making 10″ pizzas on our half sheet pan or 30cm pizza paddle. For bigger 14″ pizzas, use 42 Oz (1 litre) dough balls on three quarter sheet pans or 40 cm pizzales. Don’t be afraid to make them thick!
3 – Once the dough has risen to double its size and you’ve given it a quick knead, press your fingers into it about half way up to stretch outwards. Rotate 90 degrees and repeat until the dough is as thin as you want. If you’re not sure what we mean, check out our video on how to stretch pizza dough .
4 – Add your sauce onto the stretched base then add your toppings over that, making sure they don’t overload because once cooked there’s no going back! Finally sprinkle with some cheese and slide it in – try and keep the lid closed so that none of those precious toppings fall down below. You can open up occasionally for a minute or two towards the end if you need to. Don’t forget that there’s no turning with the Ooni 3, so be confident in the fact that once ready, it’ll slide out just fine!
5 – After 8 – 12 minutes (depending on thickness), you should see nice charring on the base and toppings, indicating that your pizza is cooked perfectly through; no soggy bottoms here! Check by lifting up one corner of your pizza using a flexible fish slice or similar utensil. If it sticks, leave for another minute or two then check again by sliding your utensil under the base. Cheese should be golden brown and bubbling; charred in some patches; tomato sauce still moist but not wet; dough crispy yet pliable. The perfect Neapolitan pizza!
6 – Once cooked, remove the pizza from the oven using your fish slice or strong spatula and place on a wire rack for 1 – 2 minutes to cool before slicing and serving.
7 – Make sure you use the metal ash tool to scrape out any leftover embers after cooking, so they don’t burn onto your Ooni 3 Pizza Oven base too much and cause problems later down the line. Put them in your fire pit, light it up or throw them straight into your garden bin! You can always buy another bag of heat beads if need be.
8 – Preheat your Ooni 3 Pizza Oven with the base removed before loading with heat beads (not included) then adding your prepared pizza dough, sauce and toppings. You can remove the ashes from the previous cook with a metal ash tool for easy cleaning before putting on your new base to start cooking. 9 – Use a laser thermometer or similar device to monitor the temperature inside the pizza oven towards the end of cooking, especially if you have a newer version that doesn’t have an adjustable vent yet. It should hover around 650-700°C as mentioned previously, but anything up to 800°C is ok as long as it’s consistent.
10 – There’s nothing worse than overloading your pizza so use this as a guideline regarding what works best:
- 21 Oz dough balls for 10″ pizzas on half sheet pan or 30cm pizza paddle
- 42 Oz dough balls for 14″ pizzas on three quarter sheet pans or 40 cm pizzas.

12 – Don’t forget that you can top up any heat beads lost in between cooks when using your Ooni 3 Pizza Oven by simply adding more straight from the bag – no need to wait for them to cool down! Just place them into an oven glove or similar to avoid getting burnt before dumping onto the base of your oven.
Cleaning and Storing an Ooni Pizza Oven:
When your Ooni is completely cool, it’s time to put on some oven mitts and get cleaning. Use a wet cloth and bucket of warm water with a small amount of washing-up liquid will remove any cooked-on debris from the inside of the oven.
A stiff brush can be used to get into the corners of the base if needed (though we don’t recommend anything too harsh). Rinse with clean water and dry off using a soft lint-free cloth or tea towel.
If you’ve got small children or pets, it might be worth considering some sort of protection for the Ooni when it’s in storage.
Replacing the Heat Shield:
The heat shield that came with your Ooni is a vital part of its performance. It protects the steel from burning and allows the air to circulate around the fire chamber. The last thing you want is an unprotected hot metal plate in your garden where someone could stand on it! Don’t forget also that when you’re replacing your heat shield, lining up one hole with a corresponding screw post is all that’s necessary to secure.
Like anything, an Ooni oven will need some TLC throughout its life to keep it in tip top condition. Ensure that the handles are kept clean and free from debris after each use. The stone deck of your Ooni can be cleaned with a stiff brush using some warm soapy water applied via a spray bottle, followed by a rinse. After this, allow everything to dry completely before packing away.
Regularly check underneath your fire chamber lid for any build up or signs of sparks escaping – if you see anything like this, ensure that all screws are fitted correctly and tighten as required.
Also, make sure that your Ooni is on flat even ground – no bricks/stones/twigs etc… If your Ooni is on uneven ground, the legs need to be adjusted accordingly. To do this, use an adjustable spanner or socket and simply turn the metal sleeve clockwise or anticlockwise as required depending on whether you want to make them shorter or longer.
When cooking with your Ooni Pro – it’s good practice not to store any flammable items underneath. Things like wood chips, herbs and newspapers can fall into the fire chamber either by accident or if someone bumps into them whilst cooking over a hot fire. This will no doubt lead to a smoky and unpleasant experience!
Please note that if you’re cooking on a wooden deck, it’s good practice to clean your Ooni after each use with some warm soapy water as above and then dry it thoroughly before storing. This will prevent any wood preservative from staining the steelwork of your Ooni.
In addition to this, we’d recommend cleaning all wooden decks with a sealant once a year at least – especially if you’ve been using this for grilling/roasting as well as baking pizzas! You can do this by hand or spray on and leave overnight before rinsing off, drying, and re-applying a protecting product such as Teak Oil or Danish Oil.

Is there a pizza size guide for Ooni Pizza Oven?
Our recommended recipe is 12″ diamater, however this may vary depending on what type of flour being used so here are some more guidelines… 13cm ø will produce a thin crust & crispy base 14cm ø will produce a standard base 15cm ø will produce the thick crust, fluffy base & will have a bit more weight to it.
How long does the Ooni Pizza Oven take to preheat?
Although Ooni can cook a pizza in as little as 90 seconds we suggest you pre-heat your oven for 3 minutes before cooking your pizzas. This ensures that you get the best results and also helps prolong the life of your oven (preheating does use up some fuel).
What type of wood is best to use for Ooni Pizza Oven?
Ooni is designed for burning lumpwood charcoal which is made from compressed chunks of wood that are not treated with chemicals, preservatives or binders. Lumpwood charcoal burns at very high temperatures producing a very intense heat.
We also recommend using premium quality lumpwood charcoal such as OBI or BBQ Revolution Lumpwood Charcoal .
Can I cook other foods in the Ooni Pizza Oven?

What is the difference between the Ooni pizza oven one & two?
The only real difference is that the one & two have slightly different internal shapes allowing you to cook slightly different sized pizzas. Other than this, they are exactly the same with all of the great features you would expect from a high end oven including a black powder coat finish, stainless steel handle and modern design.
What type of fuel does Ooni Pizza Oven use?
The Ooni Pizza Oven uses lumpwood charcoal which needs to be added every 45 minutes or so depending on how hot you want your flames burning. You can either buy our recommended charcoal, OBI woodchips or BBQ Revolution Lumpwood Charcoal , or you can use your own favorite.
We also recommend adding about 2-3 liters of water to the pan below the oven to help keep your charcoal burning for longer and also increase humidity inside the oven.
Will I need to cook on both sides?
As all of our pizzas are cooked directly on top of the ground, this means that you only need to turn your pizza half way through cooking. This also makes for much easier and neater eating!
How do I clean my Ooni Pizza Oven?
We recommend brushing down your oven and pan after every use and then leaving them to cool before wiping with a damp cloth. To make cleaning a little bit easier you can also sprinkle some talcum powder over the floor of the oven before cooking. This will make it easy to brush off any burnt bits after cooking and bring back that mirrored finish again!
How long is the warranty?
Ooni offer a standard 12 month warranty on all our products from date of purchase against manufacturing faults. How hot does the Ooni Pizza oven get?
An average 12″ pizza will cook in 60 seconds which is roughly 1000°F / 540°C! The Ooni II Pizza oven comes complete with a safety thermometer built into the handle so you can monitor the inside temperature at all times.
While the Ooni is not inexpensive, it’s at least half the price of other options out there and a solid investment that you can use year-round or, at the very least, summer after summer. We have an Ooni in our office kitchen which we’ve used for everything from pizza to breakfast sandwiches with eggs on them!
