I don’t know why but I was expecting to see lots of different shapes when researching this topic. My assumption that cake pans come in many different shapes isn’t quite correct. If you want something non-round, you need to look at specialty pans .
I have Pizzacraft’s 14-inch Hard Anodized Pizza Pan at home that I use for bakinghttps://en.wikipedia.org/wiki/Baking pizzas in my toaster oven when I don’t want to fire up the big oven. It is made completely of aluminum with an anodized finish which looks like black paint; the inside has ridges built into it to promote air circulation during cooking (see photo which means this is NOT a non-stick pan).
It does not warp, but it is thin enough that when I use it on the lowest rack setting in my toaster oven, its heat radiates through the rack and cooks the bottom of anything else stacked underneath it. To avoid this problem with heavily topped pizzas I put something (like an old metal pizza pan) between the two pans to protect the bottom of my cookware.
A thick aluminum pizza pan like Pizzacraft’s is great for cooking thick Chicago style deep dish pizzas which are baked slowly under lots of sauce and cheese; they will brown nicely then at 450 F (230 C) without burning due to their thickness. If you try these types of pies in a thin pan meant for thin cracker-crust oven baked pizzas, the bottoms will probably burn.
I’ve never used a stone or ceramic pan so I can’t say how they compare to aluminum, but I’m very happy with my Pizzacraft pizza pan and would buy it again. The benefits of using a pizza pan:
The Pizza Pan has a perforated bottom that can help cook the pizza evenly. The air bubbles in the dough are distributed more uniformly when placed on the perforated surface of the pan, making for an evenly baked crust. A pan is typically dark metal with four to six small spikes in its base to keep it from warping or spinning when moving it in and out of an oven.
The multiple, fairly deep indents of a pizza pan help crisp the bottom of the crust without burning so that it has more crunch than chew. The sides of the pan curve up to increase the surface area for browning.
Among other advantages is its rimmed sides keep cheese and toppings from sliding off during baking.
A simple aluminum baking tray does not have these features yet performs nearly as well.
